What you can expect in a day in this role:    

As Wrest Point’s Executive Sous Chef, you’ll bring culinary leadership, operational excellence, and a passion for premium hospitality to one of Tasmania’s most iconic venues. Working closely with the Executive Chef, you’ll play a pivotal role in delivering exceptional dining experiences across our diverse food outlets, supporting large scale hotel operations, and mentoring a high-performing kitchen team.  

Your key responsibilities will be to: 

  • Collaborate with the Executive Chef to uphold culinary standards, drive innovation, and ensure consistency across all venues 

  • Lead seasonal menu development and implementation, ensuring alignment with customer demand and business goals 

  • Guide outlet chefs through all stages of menu engineering, from design and costing to portion control and post-launch analysis 

  • Monitor and report on food costs, usage, and margins, and communicate targets to front-of-house teams 

  • Oversee daily kitchen operations, ensuring quality, consistency, and customer satisfaction 

  • Conduct market research to stay ahead of food trends and incorporate contemporary techniques 

  • Work closely with suppliers and the Procurement team to source quality ingredients and support cost-effective practices 

  • Drive continuous improvement initiatives to enhance productivity and profitability 

  • Foster a high-performing, engaged kitchen team through coaching, feedback, and development 

  • Ensure compliance with food safety, WHS standards, and company policies 

 

To the role you will bring:    

  • Proven management experience in large-scale hotel or resort kitchens 

  • Strong leadership and communication skills 

  • A hands-on approach with a commitment to quality and consistency 

  • Passion for Tasmanian produce and culinary innovation 

  • Ability to thrive in a fast-paced, dynamic environment 

  • Proficiency with Microsoft Office Suite, POS systems, and menu engineering software 

  • Certificate III or above in Commercial Cookery   

 An appointee to this role may be subject to pre-employment and ongoing screening checks.
