What you can expect in a day in this role:
As a Sous Chef, you will play a pivotal role in leading and coordinating the efficient and effective operation of the kitchen on a day-to-day basis across Landscape Restaurant & Grill and our Conference & Events spaces. Supporting the Head Chef and collaborating with the Hunter Street Precinct Executive Chef, you’ll be responsible for delivering exceptional dining experiences, mentoring a passionate team, and upholding the highest standards of food quality, safety, and presentation.
Your key responsibilities will be to:
Support the Head Chef by leading and inspiring the kitchen team to deliver premium dining experiences
Oversee all food preparation and execution for restaurant and events (100+ pax)
Champion a positive, respectful, and performance-driven kitchen culture
Assist with seasonal menus changes that showcase Tasmanian produce and wood-fired grill techniques
Manage kitchen budgets, food costing, and supplier relationships
Recruit, onboard, train and nurture new kitchen staff
Ensure compliance with food safety and Federal Group’s ethical standards
Collaborate with front-of-house and events teams to ensure seamless service
To the role you will bring:
Proven experience as a Sous chef in fine dining environments
Expertise in contemporary cooking and wood-fired grill techniques.
Strong leadership and team-building skills
A flexible approach to working across a rotating roster, including nights, and weekends – perfect for those who thrive in a dynamic, fast-paced hospitality environment
Certificate III or above in Commercial Cookery
Passion for Tasmanian produce and hospitality excellence
