Landscape Restaurant and Grill creates unforgettable dining experiences in the heart of Hobart’s Hunter Street waterfront precinct. Our love for the exquisite produce of our island home has inspired our goal: to constantly push the benchmark for premium dining in Tasmania. Adding to the unique quality of our dishes is the unrivalled environment in which they’re served – the historic walls of the IXL jam factory, surrounded by the iconic art of John Glover.
A feature of Landscape – the Asado Grill – is fired up daily with a selection of sherry, bourbon or port casks from the Tasmanian Cask Company. These seasoned timbers which we char and smoke over, give a unique flavour to the dishes.
The wine list at Landscape is curated by our Sommelier. We make sure that old world, new world and emerging niche wines are ever-present and always available.
That’s where you join this story, we are looking for our newest Assistant Restuarant Manager and Sommelier.
What you can expect in a day in this role:
As the Assistant Restaurant Manager/Sommelier, you will take a hands-on role in supporting the Venue Manager and leading our dedicated team to deliver tailored and memorable dining experiences. You will work closely with the team to elevate our premium Tasmanian dining experience, providing guidance, training, and inspiration while infusing your own flavour into the wine offering and service style.
Key responsibilities include:
Act as a key support to the Venue Manager in delivering exceptional service, leading daily team training, guiding new team member onboarding, overseeing wine list presentation, and fostering a consistent leadership presence within the venue.
Contribute to core administrative and operational duties as delegated by the Venue Manager, including staff rostering, procurement processes, supplier and vendor coordination, menu updates, training system maintenance, and internal committee representation.
Collaborate with the Venue Manager and Group Wine Manager to evolve and manage Landscape’s wine cellar, aligning with targets for customer value, average spend, and cost control. Take an active role in inventory management, including stocktakes and maintaining cellar order.
Partner with the Venue Manager to support overall financial performance, including achieving budget goals and contributing to the continued success and growth of the Landscape Private Dining Room.
What you will bring to the role:
Your demonstrated leadership experience in premium hospitality environments coupled with excellent communication skills are what we are looking for. You’ll also bring with you:
Strong team development and coaching ability to deliver exceptional guest experience consistently
Well-versed in fine-dining protocols and the service expectations of a luxury hotel setting
The ability to think strategically but also have a practical, hands-on approach to operations
WSET Level 3 (or equivalent), or extensive experience working with comprehensive and curated wine lists
